I have personally used by 3.9 qt. rectangular roaster (80 stickers) about 10 times in the last month! It’s the PERFECT size for just about any recipe and I make a casserole and serve it in my pretty Lodge pan, right on the table!
I was looking for the perfect guilty pleasure casserole to bring to my in-law’s house this past weekend for some football fun! I found one, and it was worth every calorie! 🙂
Mind you, I’m not a food stylist and this picture does it no justice, but the food was delicious and the Lodge pan was stylin’! I took the picture right out of the oven and before we wrapped it up to take to the in-law’s house.
Ingredients:
11 ounces Nacho Cheese Doritos
2 cups cooked shredded chicken
1 can cream of chicken soup
1 cup sour cream
8 ounces grated cheddar
1 can Ro*Tel tomatoes and chiles
1 teaspoon cumin
1 teaspoon chili powder
1/2 cup pico de gallo
Directions:
Preheat oven to 350 degrees.
* Stir together the chicken, soup, sour cream, half of the cheddar, Ro*Tel, cumin, and chili powder.
* Crush the Doritos and add half of the to the bottom of a 9×13 baking dish.
* Top with the chicken mixture.
* Add the other half of the crushed Doritos over the top of the chicken.
* Sprinkle the remaining cheese on top and bake for 20 minutes.
* Remove from the oven and top with the pico de gallo. Serve hot.
