Sunday Morning Coffee Cake Recipe

Sunday mornings, especially in the Fall, mean relaxing with the family and enjoying breakfast together.  Nothing goes better with coffee than a sweet, moist and warm coffee cake.  Here’s a really easy recipe that will have you craving it all week!

Cake

1 1/2 cups flour
3/4 cup sugar
1/2 cup vegetable oil
1/4 cup milk
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs beaten
1 8 oz container of sour cream

Topping
3/4 box of brown sugar
cinnamon to taste
2 tablespoons flour
chopped nuts (walnuts, pecans, almonds – whatever you want!)
3/4 stick butter melted

Mix all cake portion ingredients in a bowl with a spoon until flour is completely moist.  Do not over stir.  Spread half of the batter into an 8×8 square pan (greased and floured), or double recipe and use a 9×13 pan.  To make the topping:  put all dry ingredients into a bowl.  Decide on how much cinnamon you want, based on the taste. I suggest at least 1 tablespoon.  Drizzle butter over dry ingredients and stir with a  fork.  This should form a crumbly consistency.  If it ends up a little too wet, add more brown sugar.  If it’s too dry, add a bit more melted butter.  Sprinkle half of your topping onto the first layer of batter.  Drizzle/spread other half of your batter on top, and add another layer of topping.  Bake at 350 for about 35-40 minutes, or until a toothpick comes out nearly clean.  This is best served in small pieces (it’s pretty sweet if you pile on the topping), warm, with a dab of butter.  ENJOY!

Bacon Cheeseburger Soup Recipe

Bacon Cheeseburger Soup

Here is a meal all cooked in ONE pot, that will not only satisfy the comfort food craving, but also only takes 45 minutes from prep to serving. This soup has some serious flavor – and really does taste like a  warm, gooey bacon cheeseburger.  Make it for company, and they’ll be asking you for your amazing Bacon Cheeseburger Soup recipe!

1 lb ground beef
1 medium onion, chopped or diced
1 medium sweet red pepper, chopped or diced
1 garlic clove minced
3 tablespoons flour
2 1/2 cups milk
1 lb potatoes (about 3 medium sized potatoes), peeled and cut up into bite-sized pieces
1 1/2 cups water
1 tablespoon or 1 cube beef bouillon
12 oz Velveeta (about 2/14 cups)
Bacon, cooked & crumbled (3-4 slices or more if you prefer)

In a 6-qt stockpot, cook beef, onion and pepper over medium heat for about 8 minutes, or until beef is not longer pink.  Break up beef into crumbles while cooking.  Drain.  Add garlic and cook 1 more minute.  Stir in flour, until blended.  Gradually stir in milk.  Add potatoes, water and bouillon, then bring to a boil.  Reduce heat and cover while simmering for about 20 minutes or until potatoes are tender.  Add Velveeta and stir until melted.  Sprinkle with bacon pieces and serve hot. Add raw onion, lettuce shreds and tomato, if you like, as well, to really make it cheeseburger-y!

Cheesecake Trifles Recipe – 3 Ingredients, 5 Minutes!

Need a quick, delicious dessert in a hurry?  This Cheesecake Trifle recipe has only 3 ingredients: Jell-O, Cool Whip & graham crackers.  Make the Pudding ahead of time, for faster assembly.  In about 5 minutes, you’ll have a super sweet, cheesecake trifle that’s not only inexpensive, it’s delicious!  Add some chocolate syrup or cherries on top to really give it some extra flavor.  This cheesecake trifle recipe is so easy, you’ll find yourself making it over and over!

This recipe will create 4 small trifles, with a bit leftover.  Adjust accordingly.  *NOTE:  you can either make these with the pudding softer, or more of a thicker consistency.  If you want the pudding thicker, put it in the fridge for about an hour to chill.

1 package Cheesecake flavored Jell-O Pudding Mix (3.4 oz box)
2 cups cold milk
Cool Whip
Graham Crackers (crushed)

Grab a small glass.  These Ozeri Double Wall Glasses  are my favorite for individual desserts. Place crushed & crumbled graham crackers in the bottom.  Top with about 2 spoonfuls of pudding, then top pudding with about 2 tablespoons Cool Whip.  Place crumbled graham cracker on top, then continue to layer until the glass is full.  Sprinkle graham cracker on top, as the last layer. ENJOY!
